Cookie Base
  • 1 box (18.4 oz/521g) Fudge Brownie Mix Standard size
  • 1/4 cup (32g) All-Purpose Flour
  • 2 large Eggs Room temperature
  • 1/3 cup (80ml) Vegetable Oil Canola or neutral oil
  • 1 tsp (5ml) Vanilla Extract Pure
  • 1/2 cup (90g) Semi-Sweet Chocolate Chips Plus extra for topping

Equipment

  • 1 Large Mixing Bowl
  • 1 Medium cookie scoop approx 2 tbsp capacity
  • 2 Baking Sheet Lined with parchment paper

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). In a large bowl, whisk eggs, oil, and vanilla for 60 seconds until slightly frothy.
  2. Fold in brownie mix and flour with a spatula until no dry streaks remain. Do not overmix.
  3. Gently fold in the chocolate chips until evenly distributed.
  4. Scoop 2-tbsp mounds onto lined sheets. Bake for 10-12 minutes until edges are set and tops are crackled. Cool on pan for 5 minutes.

Notes

Use room temperature eggs to help the sugar dissolve for a glossier top.
Don't overbake; the cookies should still look soft in the center when removed.
