  • 1/4 cup Balsamic Vinegar 60ml, mid-grade
  • 3/4 cup Extra Virgin Olive Oil 180ml, liquid yellow
  • 1 tbsp Dijon Mustard 15g, acts as an emulsifier
  • 1 tbsp Honey 21g, or maple syrup
  • 2 cloves Fresh Garlic Mined into a paste
  • 1/2 tsp Cracked Black Pepper 1g, for visible specks
  • 1/4 tsp Kosher Salt 1.5g, to taste

  • 1 Stainless Steel Whisk Essential for proper emulsification.
  • 1 Square Glass Jar with Cork Stopper For authentic presentation and storage.
  • 1 Medium mixing bowl Glass or stainless steel preferred.

Method
 

Create the Base
  1. In a medium bowl, whisk together the balsamic vinegar, Dijon mustard, honey, and garlic paste until smooth.
Emulsify
  1. While whisking constantly, slowly drizzle in the olive oil in a very thin stream. The mixture should turn from dark brown to a thick, light-tan cream.
  2. Whisk in the cracked black pepper and salt. Look for the visible black specks against the tan base.

Notes

If the dressing separates in the fridge, let it come to room temperature and whisk briefly.
Use high-quality balsamic for the best tan color.
