  • 1/2 cup Extra Virgin Olive Oil 120ml
  • 1/4 cup Fresh Lemon Juice 60ml
  • 2 tbsp Honey 30g, for the golden-brown glaze
  • 1 tbsp Dried Oregano 3g
  • 1 tsp Cracked Black Pepper 2g, coarse grind
  • 1 tsp Kosher Salt 6g
  • 3 cloves Garlic 15g, minced
  • 2 tbsp Fresh Flat-Leaf Parsley 8g, finely minced for garnish

Equipment

  • 1 Instant-read meat thermometer Ensures meat reaches exactly 165°F (74°C).
  • 1 Basting Brush Used to create the glossy glaze finish.

Method
 

Preparation
  1. In a bowl, combine olive oil, lemon juice, honey, oregano, pepper, salt, and garlic. Whisk until emulsified.
  2. Pound chicken to 3/4-inch thickness. Submerge in marinade and refrigerate for 30 minutes to 2 hours.
Grilling
  1. Preheat grill to 400°F (200°C). Place chicken at 45-degree angle. Grill for 6 minutes without moving to create parallel char marks.
  2. Flip chicken and baste with remaining marinade. Cook for 5-7 more minutes until internal temperature is 165°F (74°C) and glaze is glossy.
  3. Rest meat for 5 minutes on a matte white ceramic plate. Garnish with minced parsley and serve.

Notes

Resting is crucial to keep the meat succulent and moist.
Use dried herbs in the marinade to prevent burning on the grill.
