  • 1 lb Chicken Breast cut into 1.5-inch irregular pieces (450g)
  • 1/2 cup All-Purpose Flour (60g)
  • 2 large Eggs beaten
  • 2 cups Panko Breadcrumbs (120g)
  • 1 tbsp Dried Parsley Flakes (2g)
  • 1/2 tsp Fine Sea Salt (3g)
  • 1 tsp Garlic Powder (5g)

  • 1 Air Fryer Basket or tray style
  • 3 Breading Bowls Shallow bowls work best
  • 1 Tongs Stainless steel or silicone

Method
 

Prep and Dredge
  1. Pat the chicken breast pieces dry with paper towels to ensure a crispy bond.
  2. Coat chicken in flour, dip in beaten egg, then press firmly into the panko-parsley mixture to create textured bumps.
Air Fry
  1. Place nuggets in the air fryer at 400°F (200°C) for 6 minutes until the crust begins to set.
  2. Flip nuggets, spray with oil, and cook for 5-6 more minutes until a deep toasted golden-brown crust forms.

Notes

Always spray the panko with a little oil to get that deep golden color.
Sprinkle sea salt immediately after cooking so it sticks to the crispy ridges.
