Ingredients
  

Main Components
  • 12 oz Spaghetti Noodles 340g, cooked al dente
  • 1.5 lbs Chicken Breast 680g, cut into 1-inch chunks
  • 2 tbsp Neutral Oil 30ml, for searing
The Sauce
  • 6 cloves Garlic Minced
  • 1/3 cup Honey 80ml
  • 1/4 cup Soy Sauce 60ml
  • 1 tsp Toasted Sesame Oil 5ml
  • 1 tsp Cornstarch 5g, mixed with 1 tbsp water
Finishing Touches
  • 2 tbsp Scallions Sliced into circles
  • 1 tbsp Sesame Seeds Ivory/Toasted
  • 1 tsp Red Chili Flakes 2g

Equipment

  • 1 Heavy-bottomed Skillet Cast iron preferred for better searing.
  • 1 Large Pasta Pot
  • 1 Kitchen Tongs Essential for tossing noodles in the glaze.

Method
 

Preparation
  1. Boil spaghetti in salted water until al dente. Drain, reserving a splash of pasta water.
  2. Heat oil in a skillet over medium-high heat. Add chicken chunks and cook undisturbed for 3-4 minutes until dark brown charred edges form. Flip and finish cooking.
Assembly
  1. Lower heat to medium. Add minced garlic and red pepper flakes, stirring for 30 seconds until fragrant.
  2. Stir in honey, soy sauce, and sesame oil. Add cornstarch slurry and whisk until the sauce becomes a thick, glossy mahogany glaze.
  3. Add noodles to the pan. Use tongs to coat every strand in the sticky sauce. Garnish with scallions and sesame seeds.

Notes

Pat chicken completely dry to ensure a dark, crispy sear.
If sauce is too thick, loosen it with a tablespoon of reserved pasta water.
