  • 3-4 large White Onions Blanched to separate layers
  • 1 lb (454g) Ground Beef 80/20 blend preferred
  • 1 cup (115g) Sharp Orange Cheddar Shredded
  • 6-8 slices (170g) Crispy Bacon Chopped into chunks
  • 1/2 cup (120ml) BBQ Sauce Mahogany-colored and thick
  • 1 tsp (6g) Coarse Salt Visible for texture
  • 1 tsp (2g) Cracked Black Pepper Freshly cracked

Equipment

  • 1 Outdoor Grill or Grill Pan For achieving char marks
  • 1 Internal Meat Thermometer To ensure beef reaches 160°F
  • 1 Silicone Basting Brush For the BBQ glaze

Method
 

Preparation
  1. Boil whole onions for 5-8 minutes until pliable. Shock in cold water and peel apart the thick outer layers.
  2. Combine ground beef, cheddar, chopped crispy bacon, salt, and pepper in a bowl. Mix until just combined.
Cooking
  1. Form beef into balls and wrap with two onion layers to fully encase the meat. Brush with oil.
  2. Place on a medium-high grill. Cook for 8-10 minutes until onion shells are translucent and show dark grill marks.
  3. Brush heavily with BBQ sauce. Grill for 5 more minutes until the sauce is bubbling and mahogany-colored.

Notes

Use a thermometer to ensure the beef hits 160°F.
Let the bombs rest for 5 minutes so the cheese sets.
